Scoring Is Where a Loaf Is Won or Lost

A score is not decoration. It is a controlled weak point that tells the loaf where to open.

When dough hits oven heat, trapped gas expands fast. That expansion has to go somewhere. Score the dough correctly and you choose where — the loaf opens along a clean, deliberate line, the crumb sets evenly, and every unit coming off the line looks like the one before it.

Score it badly, or not at all, and the dough decides for you. It blows out at the weakest random point, usually the side or the base. You get inconsistent height, torn crust, and a product your customer will not accept at scale. On a line running hundreds of pans an hour, a scoring problem is not a cosmetic issue. It is a yield issue.

The hard part is that scoring is unforgiving of variation. Dough condition changes through the day. Proof time drifts. Hydration changes with the season and the flour. A blade that cut perfectly at 7am can drag and tear by mid-shift. That is why the machine matters as much as the blade.

Anyone can put a blade on a shaft. Making it cut the same way on the ten-thousandth pan as it did on the first is the whole job.

Why Rotary Blade Scoring

Three common ways to score at production volume, and where each one holds up.

  Rotary Blade Fixed Lame / Straight Blade Water Jet
How it cuts A rotating circular blade rolls through the dough surface as the pan passes beneath it. A stationary edge drags through the dough as the product moves past. A high-pressure stream opens the surface with no physical contact.
Wet / high-hydration dough Handles it well. The rolling action carries a thin skin of dough across the cut instead of pulling it open. Struggles. Sticky dough grabs a stationary edge and tears rather than slices. Handles it, but the cut profile is different and harder to shape.
Depth consistency Repeatable once the head is set, because the blade geometry does the work every rotation. Drifts as the edge loads up with dough or dulls through a shift. Very consistent, but depth is a function of pressure and standoff.
Degassing risk Low. Minimal dragging means the open cells stay largely covered. Higher. Dragging can pull and deflate the surface. Low, but the stream can wet the surface.
Maintenance Swap blades, hubs and bearings. All stocked, all mechanical, all serviceable in-house. Frequent sharpening or replacement, and more downtime per change. Pump, nozzles, filtration and water handling to maintain.
Best suited to Pan and peel lines running consistent product where score appearance is part of the brand. Low-volume or hand-finished work. Plants already set up for it, with the utilities to support it.

What We Need To Quote Your Scoring Machine

Every scoring machine we build is engineered around a specific line. Answer these ten questions and we can quote you accurately instead of guessing — and tell you honestly if a retrofit will do the job cheaper than a new machine.

What size is your pan or peel?

Sets the working width of the machine, the shaft length, and how many blades we can space across it. Everything else is built on this number.

How many pans or peels per minute?

Your line speed determines drive sizing and whether a single scoring head can keep up or you need a wider configuration.

How many products per pan, and in what configuration?

Tells us the blade count and the exact spacing on the shaft. Four bâtards across a pan is a completely different head than one large loaf.

Is the product above the pan lip?

This is a make-or-break detail. If dough sits proud of the lip, the blade has to reach past it without the pan edge fouling the head. It changes the machine.

Show us your scores. Are they angular or straight?

Straight cuts along the direction of travel are the simplest case. Angular or patterned scores change blade orientation and how the head has to be built.

Is your plant automated? Send a layout if so.

We need to see infeed and outfeed, conveyor heights, and available footprint so the machine drops into your line instead of forcing you to rebuild around it.

What are your tolerances in cut depth?

How tight the depth has to hold drives the depth-control design. A rustic loaf and a spec-controlled retail product are not the same requirement.

The baked score tells us what actually happened through proof and oven. Scores that close up, tear, or wander point to different problems — and sometimes the fix is not a new machine.

Are you scoring after proof?

Timing changes everything about the dough surface. Fully proofed dough is slack and delicate; scoring earlier is a different cutting problem entirely.

What direction are your pans or peels heading?

Direction of travel sets machine orientation and how the score lands relative to the product. Simple question, and it is the one most often left out.

Do not worry about answering all ten perfectly. Send what you have, including photos, and we will tell you what else we need. Most conversations start with a few pictures of the score and a pan size.

Choosing the Right Blade

Three questions that settle most orders.

Diameter

3.88" or 4.5"?

This is set by your machine, not by preference. The 4.5" blade is built for a 1" shaft; the 3.88" is the more common fit across older rotary heads.

  • Measure your shaft diameter first
  • Match the outside diameter of the blade you are replacing
  • Call us with both numbers if you are unsure
Coating

Teflon Coated or Non-Coated?

Coating is about dough release. If your dough is wet, tacky or enriched, a coated blade keeps a cleaner edge for longer between wipe-downs.

  • Teflon — wet, sticky, high-hydration dough
  • Non-coated — drier dough, lower cost per blade
  • Running both and comparing is cheap and settles it fast
Mounting

Hub-Mounted or Direct?

Some heads carry the blade on a hub; others mount it directly. The hole-for-hub blade is drilled specifically for hub mounting and will not fit a direct-mount head.

  • Check how the current blade is retained before ordering
  • Replace a worn hub with the blade, not after it
  • A wandering score is often the hub, not the blade

When should a scoring blade be replaced? Watch the cut, not the calendar. A blade that is past its service life stops slicing and starts dragging — scores come out ragged at the edges, depth wanders across the pan, and dough begins building on the blade faster than it used to. Nicks in the edge show up as breaks in the score line. On a production line it is almost always cheaper to change the blade early than to run scrap.

What is rotary blade scoring?

Rotary blade scoring uses a circular blade that rotates as the product passes underneath it, rolling through the dough surface instead of dragging across it. That rolling action is what lets it cut wet, high-hydration dough cleanly, where a stationary edge tends to grab sticky dough and tear it. It is the method Fraschetti has built machines around since the early 1980s.

What size scoring blade do I need?

Your machine decides. We stock 3.88 inch outside-diameter blades, which fit a wide range of rotary heads, and a 4.5 inch blade built for a 1 inch shaft. Measure your shaft diameter and the outside diameter of the blade you are replacing. If you are unsure, call us with both measurements and we will identify it.

Should I use Teflon coated or non-coated scoring blades?

Teflon coating is about dough release. Wet, tacky or enriched doughs build up on an uncoated edge faster, which changes the cut as the shift goes on. A coated blade holds a cleaner edge longer between wipe-downs. Drier doughs often run fine on non-coated blades at a lower cost per blade. Both are the same geometry, so trying one of each on your actual dough is the fastest way to settle it.

How often should scoring blades be replaced?

There is no universal interval. It depends on your dough, your run hours, and how abrasive your product is. Replace on symptoms instead: ragged score edges, depth that wanders across the pan, dough building on the blade faster than it used to, or visible nicks showing up as breaks in the score line. Changing a blade early is almost always cheaper than running scrap.

What is a scoring blade hub and do I need one?

The hub carries the blade on the shaft and holds it running true. Some heads are hub-mounted and some mount the blade directly. Our 3.88 inch blade with a hole for a hub is drilled specifically for hub mounting and will not fit a direct-mount head. If your score has started wandering, check the hub and bearings before assuming the blade is the problem.

Can you build a scoring machine for an automated line?

Yes. That is most of what we do. Send your plant layout along with infeed and outfeed positions and conveyor heights, and we design the machine to drop into the line you already have. We have also rebuilt and retrofitted existing equipment where a new machine was not the right answer, including full production rebuilds after a fire.
